EASY BREAKFAST BOARD

This quick and simple breakfast board is the perfect fuss-free breakfast or weekend brunch.

Cook time: 20 minutes  |  Assembly time: 10 minutes  |  Serves 6 – 8

Breakfast board items:

  • Pastries (waffles, croissants, muffins, bagels, danish pastries, etc)
  • Eggs (boiled, scrambled, fried or poached)
  • Bacon
  • Cold meats
  • Yogurt (little pots or big container) with compote
  • Cheese (cream cheese, cheddar, goats cheese, etc)
  • Jams and spreads
  • Fresh Fruit

Instructions:

  1. Prepare the hot foods.
  2. Assemble the board and serve immediately.

Tip: Try a theme such as ‘flapjacks’ or ‘omelettes’ to choose your selection of delicious eats and find suitable pairings.

Make-Ahead French Toast Bake

This delicious recipe is like having dessert for breakfast!

Prep time: 20 minutes  |  Cook time: 40 minutes  |  Serves 6 – 8

Ingredients:

  • 1 loaf of bread
  • 8 large eggs
  • 3 cups milk
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • dash of salt
  • maple syrup

Instructions:

  1. Prep a casserole dish with butter or cooking spray.
  2. Arrange bread slices in 2 rows, overlapping slices.
  3. In a large bowl, combine the eggs, milk, vanilla, cinnamon and salt, and beat with a fork until blended.
  4. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices.
  5. Cover and refrigerate overnight.
  6. The next morning, preheat oven to 170°C . Bake for 40 minutes, until puffed and lightly golden.
  7. Serve with maple syrup.

Breakfast Pizza

Pizza for breakfast?! YES PLEASE!

Cook time: 35 minutes  |  Serves 2

Ingredients:

  • 300g pork sausages
  • 8 slices bacon (cut in half)
  • 8 eggs (beaten)
  • 2 medium pizza crusts (store-bought or handmade)
  • 2 cups of shredded cheese (preferably cheddar)
  • 1 cup thinly sliced onions
  • chopped flat leaf parsley
  • salt
  • black pepper

Instructions:

  1. Preheat the oven to 200°C
  2. Brown the sausage, bacon and onions in a large skillet until cooked through (10-15 minutes). Spoon out and set aside.
  3. Remove access fat from the pan. Scramble eggs, parsley and seasoning in the pan. Stir while cooking until eggs are just set.
  4. Place pizza crusts on pizza pans or a baking sheet and top with half of the shredded cheese.
  5. Bake the pizza crusts for 3-5 minutes until cheese is melted.
  6. Top crusts with the cooked eggs, sausage, bacon, onions and the remaining cheese
  7. Bake until cheese is melted.
  8. Garnish with additional parsley.
