    Winter Warmer Recipe: Butternut & Coconut Soup

    Ingredients

    • 1 medium butternut squash, peeled and cubed
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 2 cups vegetable stock
    • 1 can (400ml) coconut milk
    • 1 tbsp olive oil or butter
    • Salt and pepper to taste
    • Optional: a pinch of curry powder or chilli flakes for extra warmth

    Method

    1. In a large pot, heat the olive oil or butter, then sauté the onion and garlic until soft and fragrant.
    2. Add the butternut cubes and stir well for a few minutes to coat.
    3. Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer for around 20–25 minutes, until the butternut is tender.
    4. Use a stick blender to puree the soup until smooth, or transfer carefully to a blender.
    5. Stir in the coconut milk, then season with salt, pepper, and optional spices as desired. Heat gently until warmed through.

    Serve hot, drizzled with coconut milk and sprinkled with herbs or seeds, if desired.

    • Serve with warm, crusty bread or garlic toast.
    • Top with toasted pumpkin seeds or a swirl of plain yoghurt for extra richness.
